Val Champ’s wonderful Chocolate Cake

Ingredients

 

1/2 cup butter

1/2 cup cooking oil

1 cup water

4 heaping tablespoons of cocoa

 

2 cups white sugar

2 cups flour

1/2 teaspoon salt

 

2 eggs

1/2 cup sour milk + 1 teaspoon of baking soda

1 teaspoon of vanilla

 

Directions

Put in a saucepan on the stove and bring to a full boil:

1/2 cup butter

1/2 cup cooking oil

1 cup water

4 heaping tablespoons of cocoa

 

Cool quickly in fridge.

 

Combine in a bowl:

2 cups white sugar

2 cups flour

1/2 teaspoon salt

 

Add the cocoa mixture to the bowl and blend well.  Then add:

2 eggs

1/2 cup sour milk + 1 teaspoon of baking soda

1 teaspoon of vanilla

 

Pour into a 9" by 14" greased pan and bake 20-25 min at 350 degrees

Cake will be high in center when its done...don't leave it too long  though, as it will quickly burn on the edges.  If you take it out too early it falls in the center. and its like pudding..yummy anyway

 

Frosting:

In a pan on the stove blend:

4 tablespoons of butter

2 heaping tablespoons of cocoa

3 tablespoons of milk.

       

Heat together and then add 1 1/2 to 2 cups icing sugar.  Combine well on the stove and ice cake while frosting and cake are still warm.

 

Hope that you like it.. it's wonderfully moist but doesn't work in a layer cake well..
